Product Information

Dolcélite Kukimix is a semi-finished product exclusively for the preparation of small Sicilian Cassata cakes, Africani (sweets made with dried chestnut and rum), and Savoiardo (Ladyfingers) either on baking trays or on baking paper.
This particular formula gives structure to the finished product as well as an authentic appearance and flavour, in keeping with the traditional product.
Quick and easy-to-use.

Savoiardi with Dolcélite Kukimix

Ingredients

Wheat starch, sugar, emulsifiers (E475, E471, E433), gluten, vegetable fibre, raising agents (disodium diphosphate E4501, sodium carbonate acid E50011, thickeners (E412, E401), malt extract, flavouring.

Africani and Ladyfinger
Dolcélite Kukimix kg 1,000
Egg kg 1,100
Granulated Sugar kg 0,200
  --------------------------
TOTAL kg 2,300
Preparation

Ladyfingers with Dolcélite Kukimix Whip all the ingredients together in a food mixer with a paddle attachment at high speed for 5 minutes.
Place onto the surface of a baking tray lined with paper to create small Africani sweets and regular Africani.
For Ladyfingers, place into a mold.

To create a more rounded product:
Dolcélite Kukimix kg 1,100
Egg kg 1,100
Granulated Sugar kg 0,200
  --------------------------
TOTAL kg 2,400
Preparation

Whip all the ingredients together in a food mixer with a paddle attachment at high speed for 5 minutes.
Place onto the surface of a baking tray lined with paper to create small Africani sweets and regular Africani.
